GETTING HITCHED WITHOUT HITCHES
A FINE MARRIAGE AT THE GLYN CLYDACH HOTEL
|
Built
as a country house in the early 19th century, Glyn Clydach was converted
into a hotel in the 1970's, and purchased by Brian Shepherd in 1987, since
when many modifications have been made to increase it's potential.
Overlooking the Neath Valley, the wooded location of the hotel makes it a
peaceful place to stay. To maximise on this quality the Hotel provides a
comprehensive wedding service, having all the facilities necessary for
either an intimate ceremony, or a full scale wedding banquet for up to 300
guests.
The planning of an extension, forming the Fairways suite, overlooking part
of the Hotel's 15 acres of picturesque grounds, provided the driving force
for a reassessment of the catering requirements of the Hotel. As well as
providing facilities for the existing banqueting suites and restaurant,
the new kitchen had to be versatile enough to cope with the additional
demands of the Fairways suite, and had to fit into the space available
when 2 under used meeting rooms were combined.
The ability of the RACS CAD system to enable modifications to designs and
equipment to be made easily allowed RACS and the Hotel management to
discuss alterations and make instant changes to the layout proposals. Once
a satisfactory layout had been designed and the equipment specified, the
question of timescales became very important. Relying, as it does, on
wedding business, the Glyn Clydach could not afford for the kitchens to be
out of commission for long periods. |

The
timescale for fitting out the kitchen, from the floor up, was 3 weeks, and
the more modern of their existing equipment had to be moved and
reinstalled inside 6 days, with 3 wedding receptions and a dinner planned
for the day after completion. |

The
new equipment supplied includes an electric combination oven, 2 gas 6
burner ranges, deep fat fryer, blast chiller freezer, dish washer, purpose
built meat cold room, a purpose made servery counter as well as extract
canopy, benches, racks and sinks and floor, wall and ceiling cladding.
Original equipment which was refitted included an electric combination
oven, deep fat fryer, 2 grills, Bain Marie, high pressure steamer and cold
room. Having clad the kitchen and installed the fittings and services, the
new equipment and the resiting of the existing equipment was accomplished
within the very tight timescale, and the wedding receptions went ahead
without a hitch. . |
