WALES V JAPAN
CATERING FOR OCEAN TECHNICAL GLASS

| Ocean
Technical Glass, a major world player in the manufacture of television
screens, were the first manufacturing company of significance to move into
Cardiff Bay. The completed factory, covering some 50 acres, includes a
furnace for melting the glass for the television screens, as well as batch
and melting processes, and a finishing and inspection plant. When in full
production, the total workforce numbers some 750.
The catering requirements for
this large factory provide a number of challenges. As well as needing to
produce European food for the Welsh workforce, the kitchen had to be
capable of providing traditional Japanese style fare for the Japanese
management team. And these meals needed to be produced at the same time.
When asked to design and install
the kitchen for phase 1 of the development, RACS proved equal to this
challenge, providing a facility which enables the catering staff to
prepare both English and Japanese food side by side. The major difference
from a normal European kitchen is the replacement of a 6 burner range with
a solid top cooker, enabling much of the traditional Japanese cooking to
be provided from this unit.
Around one fifth of the meals
produced are Japanese, and the chefs find little problem in combining the
two styles of catering, within the kitchen which has been provided.

To
complement the kitchen, RACS also installed an 11.5 metre long counter
style servery within the 130 seat restaurant area. This facility allows
the employees to chose from a wide displayed range of either hot or cold
food. |

The
catering equipment within the kitchen area consists of a solid top, and a
6 burner range, combination oven and salamander, together with two deep
fat fryers. Freezer and chilled cold rooms, a blast chiller and dry store,
together with sinks, preparation tables and dish washing facilities. The
servery has both hot and cold food display facilities. A number of
portable Japanese style electric cookers have also been provided.
The short timescale required for the installation was further complicated
by late changes to the layout due to a need to provide a staircase into
the kitchen area, resulting in a reduction of three feet in the length of
the room. While requiring a compromise in the space available for certain
of the food preparation facilities, the RACS design has still managed to
provide a kitchen with ergonomics taken fully into account. |
