14. THE GRAND PAVILION, PORTHCAWL

Built in 1932, the Grand Pavilion, with its octagonal dome and striking frontage, has dominated the Porthcawl seafront for over 60 years. Originally intended as a Palm Court, the Pavilion has always operated as a multifunctional venue.

Capable of holding over 700 in the Main Hall, and 125 in the Jubilee Suite, the Pavilion's flexible space allows for all types of function, from ballroom dancing, plays, light entertainment, to political party conferences and the like.

When extra facilities were required, the two 'wings' of open fronted shelters of the original construction provided the ideal solution. By glazing in the fronts of these shelters, a suite of offices has been created in the West wing, and a bar and catering facility in the East.

Undaunted by these problems, RACS designed, installed and commissioned the kitchen in only a few weeks, providing a fully functional facility within the short timescale specified by the client. In order to maximise the working space, a centre preparation area has been provided, ensuring that all functional equipment is mounted on or against the walls.

The small space available for the kitchen now contains preparation and serving equipment which provides both hot and cold food and drinks, as well as all washing facilities. A fridge and freezer provide cold storage, a refrigerated display case and a Bain Marie allow both hot and cold foods to be displayed on the serving counter.

The design and installation of a kitchen to service this new catering facility presented several problems. A tight timescale, having to have the installation completed in the weeks before a major conference, provided logistical problems, but even before that the design presented a major headache.

The space available was less than 15 square metres, and it was triangular. One wall follows the line of the octagonal main building, with the second wall being the side wall and the front butting onto the main walkway to the new bar. Not withstanding this lack of space, the fully functional kitchen had to be capable of servicing an eating area with 50 seats.
